Hey guys...
I have an Intel i7 960 @3.20 and 6 gigs of DDR3 ram... Motherboard is a Gigabyte X58A-UD3R. If I wanted to upgrade to give it a little more I would probably say go with 6 more gigs of ram to make it 12. Do you think I should also upgrade the CPU or will I notice a big difference once I double the ram?
I run FSX...

Given you have 6GB already, I don't think the RAM increase will give you anything noticable. CPU upgrade on the other hand will.

What kind of performance are you looking for? I can tell you I have an i5-2600K, 16GB of ram, GTX460v2 and a SATAIII SSD. I start FSX with a frame limiter (I do not use the built in one) and I never drop below 30fps running at 1920x1080.

I still get some stuttering at times when using lots of add-ons... I would think a machine like mine would have no problems at all. I used Nick's setup guide for Win7 and FSX so I figured there wasn't much more tweeking I could do and it would be best to upgrade the computer a bit more to get it a little smoother.

Matt,
I have a VERY Similar system to yours (same i7-960 processor, same Gigabyte X58A-UD3R motherboard) and I do not ever get stuttering, even when I ran a i7-930 processor. You shouldn't have to upgrade your system (though I didn't see your graphics card type), you just need to get it set up correctly.
Before I tell you my frame rates, I want to say that I run 3 - 23-inch monitors, which means that the frame rates I report here would be are going to be about 60% of what you'd see if you had a single monitor. Example: If I have 15fps on three monitors, I'd have well over 30fps on a single monitor.
PMDG NGX Frame Rates:
The NGX is tough on frame rates. I'm able to get 15fps in the PMDG NGX Virtual Cockpit (30fps external view, but only because I run an external frame rate limiter set at 30fps) at a highly detailed airport such as SunSkyJet's KPHL or any number of large, highly detailed payware airports. When outside of 10nm of a highly detailed airport, my system jumps to 50+ fps before my external frame rate limiter pushes it back down to 30fps - when in the Virtual Cockpit of the NGX.
Level-D 767
Same conditions as with the NGX, though my frame rates are always at 30+fps
PMDG MD-11
Can't remember exactly, but I'll say they are much better than the NGX, and just below the Level-D
Eaglesoft Citation X
Just as good as the Level-D, maybe even a little better.
CaptainSim
Won't fly any of the CaptainSim Aircraft I own!
There are a lot of FSX settings that need to be addressed and some tweaks and use of an external frame rate limiter. I will say that I don't use the Bojote's Tweaks as they don't work well for my ATI 5830. I do take advantage of the FSL Texture fix tweaks. My Affinity Mask is set to 252, I 've tried other settings but that seems the best for OUR processor under Windows 7-64.
Start with your FSX Settings (there is a lot of good info already on the web for this), and use FSL Texture Fix if you had an ATI Card, or Bojote's Tweaks if you have an NVIDIA. Be sure to back up your FSX.CFG before doing anything.
If you have any questions or would like some help, I'd be happy to speak with you on the Flight Simulator Voice Server run my the Online Virtual Pilots Association (not a Virtual Airline, but a Pilot's Association for members of all VAs).
